Japan

In 2019, just before COVID happened we had 2 separate trips  to Japan. My brother had been working there as a pilot a few years before and had put me in touch with a local who had a connection to a knife maker who lived a few hours outside of Osaka. I ordered a kitchen knife for myself and a hunting knife for my son in law. both were beautifully made using two different steels sandwiched together to give them both strength and sharpness. The kitchen knife is  a  Deba design, originally designed to butcher big fish such as tuna, and it is fun to use in the kitchen. The hunting knife had the option of having a hollow handle so that you could converted into a spear while you were out and about in the Japanese countryside looking for wild boar!
