This knife was made during a trip to Alice Springs to learn from my mate Francois Mazieres a brilliant blade smith based there. high carbon steel and the Stablised Silky Oak make this a nice link to the red center and the pioneering spirit that still lives on there. Being Carbon steel, this knife needs to be cared for a little bit more than a normal stailess steel knife, no dishwasher, dry and oil afdter use, in return you get a knife thaqt can be sharpened beautifully and which will hold its edge a lot longer. I know chefs who will only ever use carbon knifes.
